ORIGIN
Vineyards of the contributing members located in the hills of Dolianova, grown on soils with a good component of limestone and clay.
PROCESSING
The grapes are rigorously harvested by hand and, once transported to the cellar, they are soft pressed and the free-run must is cooled and separated from the lees by static sedimentation. The secondary fermentation takes place in an autoclave, thanks to selected yeasts.
CHARACTERISTICS
Color: straw yellow with greenish reflections, which stand out thanks to the fine and persistent perlage.
Aroma: delicate and fragrant notes of yellow-fleshed fruits.
Taste: lively, well balanced between acidity and sugars. Slightly bitter aftertaste.
COMBINATIONS
Caralis Demi-Sec is perfect to accompany light desserts. Excellent with leavened products such as Pandoro and Colomba, but also delicate cakes and desserts.
