PROCESSING
Manual harvesting of the grapes and cooling with dry ice. Loading of the press with whole, non-stemmed grapes with a 4-hour stop for maceration. Reduction pressing and subsequent fermentation at a stable temperature of 13°C. It refines for three months in steel on the fine lees and 1 month of aging in the bottle.
CHARACTERISTICS
Color: Bright straw yellow with greenish reflections.
Perfume: Initially floral on the notes of chamomile flowers then expresses fruity and mineral notes.
