The Marinostru grated tuna bottarga from the Alice Surgelati company has a preparation process that has remained unchanged over time: cleaning, salting, pressing and drying.
Slightly tastier than mullet, it is excellent on hot croutons veiled in butter or on fish-based first courses, for example spaghetti with clams.
