Vineyards owned by the winery, in the plains of Terralba. The soils are sandy-clay, of good structure and depth.
PROCESSING AND AGING
The harvest is manual and takes place between the last decade of September and the first decade of October. The vinification involves a fermentative maceration of about 15 days at a temperature of 26-28 º C. The repeated pumping over and délestage ensure a good extraction of aromatic components and dyes. After fermentation and a short stop in steel, it spends about 12 months in French oak barrels. It then ages for another 8 months in steel and 40 days in bottle.
Colour: dark and intense purplish red.
Bouquet: ripe red fruits, among which cherry and blackberry stand out. Delicate balsamic fumes and Mediterranean maquis.
Taste: in the mouth reveals the character of the structured wine that is and evident tannins but velvety and complex.
Ideal to pair dishes with intense and spicy flavors typical of Mediterranean cuisine. Pasta with pork and sheep meat, ravioli filled with tasty cheeses and risotto with game. It is exalted in the company of aged sheep cheeses.
