PROCESSING AND AGING
Once harvested, the grapes macerate for about 10 days, carrying out the malolactic fermentation in vitrified cement wine vessels. Then follows the refinement, carried out first for 12 months in barrique and, after bottling, for another 6 months directly in glass.
Color: intense ruby red.
Bouquet: intense, persistent, balanced.
Taste: velvety, full, harmonious, warm, round.
Excellent with first courses with savory meat sauces, spit-roasted suckling pig, grilled red meat, roast lamb, hen with myrtle, Sardinian sausage, aged Sardinian pecorino.
