Vineyards reared in controspalliera with guyot pruning, on calcareous-marly soils typical of this territory, in the countryside of Serdiana (CA).
PROCESSING AND AGING
The grapes are harvested in the first days of September. Once transported to the cellar, they are subjected to white vinification, using pneumatic presses, in order to extract from the berries the best must flower. The wine ages for six months in steel containers at a controlled temperature, in the presence of dead yeast peel, to improve the structure. Once the maturation is over, the wine is bottled and aged in glass for a few months before being put on the market.
Suitable to rest in the cellar up to three years from the harvest.
FEATURES
Color: bright straw yellow with greenish reflections.
Perfume: elegant notes of ripe fruit with white pulp and white flowers. Hints of minerals and aromatic herbs.
Taste: fine and elegant, with great freshness and minerality.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with appetizers and savory canapes, slightly aged cheeses. Perfect at the table together with seafood appetizers, pasta dishes such as spaghetti with clams and simple seafood seconds like a grilled sea bream. A classic then with raw seafood, like oysters.
