PROCESSING
Long maceration of 30 days at 25°C. Completes malolactic fermentation and subsequent refinement on fine lees, in thermo-conditioned steel vats in order to enhance the typical aromatic component of the vine.
CHARACTERISTICS
Colour: intense ruby red.
Aroma: slightly spicy with hints of very ripe red fruit.
Taste: structured, warm and persistent.
COMBINATIONS
Cold cuts and first courses of land, medium-long aged Sardinian pecorino. Roast suckling pig and lamb seasoned with myrtle and juniper, red ox.
