ORIGIN
Vineyards trained in counter-espalier with Guyot pruning, on granitic weathering soils in Oliena and surrounding areas (NU).
PROCESSING
The grapes are harvested by hand once they have reached perfect ripeness. The bunches are immediately taken to the cellar, subjected to destemming and crushing and then sent for red vinification. Once the alcoholic fermentation is complete, the must continues to mature for 12 months in stainless steel containers, always at a controlled temperature, before finishing refinement in the bottle.
CHARACTERISTICS
Color: ruby red with violet reflections.
Perfume: notes of cherry, myrtle berries and carnation, spicy finish.
Taste: good acidity upon entry into the mouth, enveloping and balanced, tannic.
COMBINATIONS
IoLei is a perfect cannonau to drink as an aperitif, combined with a Sardinian platter of cured meats and cheeses. We recommend you try it at the table together with land dishes and grilled meats.
