PROCESSING AND AGING
Soft pressing of the grapes harvested in the coolest hours of the day, cooling of the must and static sedimentation for 12 hours. The clean fraction is started with the first fermentation carried out by selected yeasts. In the following winter the cuvèe is assembled for the second fermentation. Aging on the lees for 18 months.
Color: pale straw yellow with greenish reflections, fine and persistent perlage.
Bouquet: floral and elegant with delicate notes of yeast, bread crust and pleasant hints of toasted dried fruit.
Taste: full and persuasive, lively freshness present throughout the drink, with a balanced finish accompanied by pleasant notes of bread crust.
Excellent as an aperitif, it accompanies in a sublime way raw oysters, prawns and scampi.
