Area surrounding the winery, Dolianova (CA).
PROCESSING
Soft pressing of the grapes harvested in the early hours of the day, followed by cooling of the free-run must and static sedimentation for 12 hours. The clean fraction is sent for the first fermentation conducted by selected yeasts. The following winter the cuvée intended for the second fermentation is assembled. It is aged on the yeasts for 18 months.
CHARACTERISTICS
Color: pale straw yellow with greenish reflections, fine and persistent perlage.
Aroma: floral and elegant with delicate notes of yeast, bread crust and pleasant hints of toasted dried fruit.
Taste: full and persuasive, lively freshness present throughout the drink, with a balanced finish accompanied by pleasant notes of bread crust.
COMBINATIONS
Caralis Metodo Classico is an excellent aperitif sparkling wine, it contrasts well with the fattiness of cured meats such as prosciutto crudo and guanciale, it accompanies in a sublime way crudités of oysters, shrimp and scampi. To try with seafood first courses with a sweet tendency such as linguine shrimp and zucchini.
