PROCESSING
Soft pressing of the grapes harvested in the early hours of the day, followed by cooling of the free-run must and static sedimentation for 12 hours. The clean fraction is sent to the first fermentation conducted by selected yeasts. In the following winter the cuvée destined for secondary fermentation is assembled. Refines on yeasts for 18 months.
CHARACTERISTICS
Colour: pale straw yellow with greenish reflections, fine and persistent perlage.
Bouquet: floral and elegant with delicate notes of yeast, bread crust and pleasant hints of toasted dried fruit.
Taste: full and persuasive, lively freshness present throughout the drink, with a balanced finish accompanied by pleasant notes of bread crust.
COMBINATIONS
Excellent as an aperitif, it sublimely accompanies crudités of oysters, prawns and scampi.
