GRAPES Carignano

ORIGIN
Vineyards located in the Sulcis area, the south-western tip of Sardinia.
PROCESSING
The grapes are harvested manually when perfectly ripe and once they arrive in the cellar they are subjected to destemming and crushing. The must is left to macerate with the skins for at least eight days, in steel tanks, during which the alcoholic fermentation takes place. The wine then ages in steel containers and in cement tanks for a few months, before bottling and refining in glass.
CHARACTERISTICS
Color: splendid ruby red with garnet reflections and great viscosity.
Aroma: broad and elegant with hints of ripe red fruit, geranium, black pepper and light hydrocarbons.
Taste: on the palate it expresses its importance with softness, balsamic notes and sweet tannins.
COMBINATIONS
Ideal with grilled red meats, stewed eel, fatty fish, first courses based on feathered game.
