ORIGIN
Sapling and espalier vineyards cultivated in the lower Sulcis, on soils that tend to be medium-textured, characterized by clay, sand and limestone fractions that vary depending on the area.
PROCESSING
The grapes are subjected to red vinification with destemming and pressing, the must and pomace are transferred into thermoregulated stainless steel containers, where alcoholic fermentation takes place at a temperature between 25°C and 30°C. The frequent pumping over puts yeasts and pomace into circulation and favors a complete elaboration of the sugars and the optimal extraction of the polyphenolic substances from the skins. Once this phase is completed, malolactic fermentation occurs, which gives the wine greater softness. Maturation continues in concrete tanks for a few months, before refinement in the bottle.
