Sapling and espalier vineyards cultivated in the lower Sulcis, on medium-textured soils, characterized by clayey, sandy and calcareous fractions that vary depending on the area.
PROCESSING AND AGING
The grapes are subjected to red vinification with destemming and crushing, the must and the marc are transferred to temperature-controlled stainless steel containers, where alcoholic fermentation takes place at a temperature between 25 ° C and 30 ° C. Frequent pumping over brings yeasts and pomace into circulation and favors a complete processing of sugars and the optimal extraction of polyphenolic substances from the skins. At the end of this phase, the malolactic fermentation takes place, which gives the wine greater softness. The maturation continues in cement vats for a few months, before refining in the bottle.
