GRAPE VARIETY Cabernet Sauvignon, Syrah, Merlot, Cabernet Franc, Grenache
Spurred cordon vineyards owned by the winery, on medium-textured sandy soils with a fair amount of stone.
Once harvested, the grapes are cooled using refrigerators. Manual selection first of the bunches followed by soft destemming, and then of the berries. Cold pre-fermentation maceration and on the skins for approximately 30 days in steel at a temperature of 26°C. Refines in steel for 12 months, in new French oak barriques for 24 months and at least 12 months in the bottle before marketing
Color: intense ruby red.
Perfume: : notes of tobacco, liquorice, chocolate and leather alternate with spices and Mediterranean scrub.
Taste: elegant and savory. Vigorous, but also fine and velvety tannins. Persistent finish.
Perfect with first courses based on game sauces, but also second courses such as grilled beef or roast lamb.
