ORIGIN
Vineyards owned by the winery, trained in espalier on granite weathering soil at an altitude between 300 and 450 meters above sea level, in the countryside of Monti (OT).
PROCESSING
Once harvested, the Vermentino bunches are subjected to soft pressing. Once the free-run must has been obtained, yeasts are inoculated, in stainless steel containers and at a controlled temperature, to start the alcoholic fermentation. It is then matured for a few months in steel containers always at a controlled temperature, before finishing the refinement in the bottle.
CHARACTERISTICS
Colour: straw yellow with greenish reflections.
Perfume: fruity and floral notes, but also citrus. The nuances of aromatic herbs are typical of Vermentino.
Taste: fresh and savory, substantial, with fine aromas and good persistence.
COMBINATIONS
It goes perfectly with seafood cuisine, excellent for accompanying delicate first courses and shellfish appetizers. It can be enjoyed easily as an aperitif.
