This special wine owes its unusual light colour to the particular processing technique that uses the free-run must, the noblest part of the grape, processed without the marc. This year Gioias changes its look: the new label pays homage to one of the most typical and precious artefacts produced in Oliena : the hand-embroidered Sardinian shawl , with rows of brightly colored flowers standing out against the shiny black.
GRAPES Native black grapes
ALCOHOL CONTENT 13.5%
ORIGIN
Vineyards of about 15 years old, trained with spurred cordon, on granite disintegration soils, at the foot of Monte Corrasi (NU).
PROCESSING
The grapes are gently placed in a soft press and pressed with the utmost care. Only the first free-run must is extracted up to 50% and cold-decanted, then it is drawn off and sent to fermentation which takes place in stainless steel containers at a temperature of 17-18°c. The wine ages for 3 months together with its fine lees with periodic pumping over.
CHARACTERISTICS
Color: straw yellow.
Aroma: aromatic profile of good fragrance, with white flowers in evidence.
Taste: structured and with great personality from a traditional island red grape, good freshness and pleasant length.
COMBINATIONS
Ideal with fish and oyster-based dishes, but it can also perfectly accompany cured meats and cheeses and other land appetizers such as artichokes and products in oil. At the table it also goes well with rustic Italian dishes such as orecchiette with turnip tops.
