ORIGIN
Alluvial soils, with a loamy - sandy mixture. The passage of the Tirso river for centuries has given rise to these naturally fertile soils, draining due to the presence of sands. The soils of the Tirso Valley, so characterized, are called "Bennaxi".
PROCESSING AND AGING
The grapes are harvested by hand and vinified in white with flor yeasts and alcoholic fermentation in concrete tanks, without controlling the temperature. After about six months the wine obtained is transferred into oak and chestnut barrels left full, so that the 'film' of flor yeasts can form. The wine remains like this for over fifteen years, improving over time the structure, the alcohol content, the softness and the complexity of its aromas and aromas.
FEATURES
Color: golden yellow with amber reflections.
Bouquet: intense and elegant, liquorice and chestnut honey, quince, nutmeg and saffron stand out. Hints of nuts.
Taste: dry, soft and enveloping. Its alcohol content is moderated by freshness and flavor. The sip of very long persistence.
FOOD PAIRINGS
Excellent as a meditation wine, to enhance moments of reflection and relaxation. Perfect at the table if accompanied by typical sweets such as amaretti or mostaccioli, but also with blue cheeses.
