ORIGIN
Vineyards grown using the espalier system, with spurred cordon and guyot pruning, on calcareous-clayey soils in northern Sardinia (SS).
PROCESSING
Manual harvest of the grapes, followed by soft pressing and fermentation of the first must in stainless steel containers at a controlled temperature. Mamaioa then matures in steel and glass-lined cement tanks for a few months, before bottling and refining in the bottle for a few months before being put on sale.

COMBINATIONS
Mamaioa is a white wine perfect for an aperitif, but it also goes well with seafood: appetizers such as octopus and potato salad, first courses such as spaghetti with clams and bottarga, second courses such as red mullet "a scabecciu" or gattuccio made "a burrida".
