ORIGIN
Territory surrounding the winery, characterized by medium-textured soils composed of clayey limestones of Miocene origin, medium hilly position, sub-arid climate.
PROCESSING
The grapes, after destemming and crushing, are sent to fermentation which lasts for 8-10 days at a temperature of 26°C. Upon racking, the wine is decanted into vitrified concrete tanks where it undergoes malolactic fermentation. After a refinement period of a few months it is put on the market.
CHARACTERISTICS
Color: ruby red with violet reflections, tending towards garnet with aging.
Bouquet: intense and persistent, ethereal, vinous, with hints of raspberry and cherry.
Taste: warm, rightly tannic, persistent, with a delicate herbaceous vein.
COMBINATIONS
Dry soups, risottos, lean meats and medium-aged cheeses.
