Don Efisio Monica di Sardegna Superiore 2018
The name is a tribute to Don Efisio Carta, noble exponent of an important family, owner of the Cabras pond (clear reference to the marshy shoots represented on the label). On November 16, 1978 Don Efisio was kidnapped in the splendid seaside town of Turr'e Seu, in Sinis, and never returned home, despite the payment of a ransom.

PROCESSING AND AGING
Harvested at perfect ripeness, the grapes are subjected to red vinification by destemming-pressing and maceration of the skins in the must for 8-10 days, in stainless steel containers at a controlled temperature of 24 ° C, and at the same time alcoholic fermentation takes place. Once the latter is completed, it matures for about a year in exhausted oak barrels and cement vats, before the final refinement in the bottle.
Color: Red with garnet and purple reflections.
Bouquet: Notes of red fruits.
Taste: Dry and soft, with good persistence and medium body.
It goes well with pasta dishes with sauce, roast meats and cheeses.
