PROCESSING AND AGING
The bunches, carefully selected during the harvest, are de-stemmed, and the berries start pressing. The must obtained ferments in steel, macerating at a controlled temperature between 28 and 30 degrees for 10-12 days, also carrying out malolactic fermentation. It then continues with the refinement phase, in which the wine first rests for 12 months in barrique, and then, after bottling, for another 6 months directly in glass.
Color: ruby red
Bouquet: intense and enveloping, red cherry fruit and plum in evidence, with notes of vanilla and cinnamon.
Taste: harmonious and velvety with very sweet tannins, red fruit and spices in perfect balance, long finish.
Excellent with traditional first courses such as malloreddus with sauce and tasty fish soups, stewed lamb. It also goes well with medium-aged cheeses, grilled red meats.
