PROCESSING AND AGING
After the crushing-destemming follows the maceration for five days at a controlled temperature and ends with the fermentation in stainless steel vats. Aging for 6 months in cement vats and 2 or 3 months in the bottle.
Color: Intense ruby red with a slightly purplish edge, very clear.
Bouquet: Intense and persistent, vegetal and spicy notes from which a slight nuance of licorice emerges.
Taste: dry and soft, pleasantly fresh, balanced and harmonious with a good persistence on the nose.
Lean appetizers, dry soups and broths also with savory sauces, pan-fried and grilled white meats, medium-aged goat and pecorino cheeses.
