Selection of the best Vermentino grapes from the most suitable vineyards in the Surrau valley, Arzachena.
PROCESSING AND AGING
It comes from the same grapes destined for Sciala but harvested late. The must remains in contact with the skins for 12/24 hours at a temperature below 10 degrees. The fermentation takes place half in large non-toasted French oak barrels and half in steel and concrete vats. The assembly evolves in the presence of its own yeasts in steel and concrete vats for 6 months. Finally, it rests in the bottle for at least 9 months.
Color: straw yellow with golden reflections.
Bouquet: intense bouquet with notes of ripe fruit and Mediterranean scrub.
Taste: soft, long, full and persistent, with fruity, mineral and tertiary notes.
Ideal in combination with seafood, but also with fish soups, blue and medium-aged cheeses.
