Espalier-trained vines with guyot pruning, on the calcareous-marly soils typical of this area, in the countryside of Serdiana (CA).
PROCESSING AND AGING
The grapes are harvested in the first days of October. Once transported to the cellar, they are subjected to white vinification, using pneumatic presses, in order to extract the best free-run juice from the grapes. The wine ages for six months in steel containers at a controlled temperature, in the presence of the peel of dead yeasts, to improve its structure. Once the maturation is complete, the wine is bottled and refined in glass for a few months before being put on the market.
Color: pale straw yellow with greenish reflections.
Bouquet: elegant of white pulp fruit and white flowers. Mineral hints given by the particular terroir.
Taste: fresh and mineral, of medium structure, smooth drink and great finesse. Good persistence and intensity.
Excellent as an aperitif, it goes well with snacks and savory canapés. Perfect at the table together with seafood appetizers, delicate first courses and simple seafood main courses. A classic then with raw seafood, such as oysters.
