GRAPES Vermentino

ORIGIN
Vineyards owned by the winery and trained with spurred cordon in the Sulcis area, in the south-western tip of Sardinia.
PROCESSING
The grapes are cooled to 4 °C and left to macerate for about 12 hours before soft pressing and fermentation at 18 - 20 °C. A small portion is fermented and refined in oak barriques. This is followed by 7 months of refinement on the fine lees and at least another 2 months in the bottle.
CHARACTERISTICS
Color: Young golden yellow with citrus reflections; full and consistent.
Nose: Intensity and complexity. Ripe fruit, cooked apples, jasmine, with light notes of vanilla and English toffee.
Taste: Full and very elegant entry, fresh and savoury. Long and clean finish.
COMBINATIONS
Opale is a Vermentino that pairs excellently with strong-flavoured first courses, grilled fatty fish, white meats and medium-aged cheeses.
