PROCESSING
Destemming and subsequent soft pressing. Fermentation at a controlled temperature between 16-18°C. Cooling to stop fermentation -3°- 4°C, filtration, sparkling winemaking with the Charmat method of natural fermentation. Bottling follows in a nitrogen atmosphere with cork stopper.
CHARACTERISTICS
Colour: light straw yellow, brilliant, fine and persistent perlage.
Bouquet: intense, the hints of fruit stand out with hints of peach and apricot.
Taste: Balanced sweet flavour, fine with long tasting persistence.
COMBINATIONS
Ideal at the table with fruit and desserts at the end of the meal.
