Vineyards trained with the spurred cordon system on calcareous soils, Tenute Sella & Mosca, Alghero.
The vinification of the grapes begins with the pre-fermentation maceration at 10 ° C for 24 hours. Soft pressing of whole and de-stemmed grapes follows; cold static decantation. Fermentation takes place in stainless steel at a controlled temperature of 18 ° C; 15% of the must ferments in barrique. One part ages in steel on the lees for 6 months, 15%
proceeds with aging in barrique.
Color: Deep straw yellow.
Bouquet: Mediterranean scrub, thistle and officinal herbs.
Taste: soft, savory and almost brackish in the memory of the sea.
Terre Bianche cuvèe certainly gives its best when combined with hot fish appetizers, stewed fish, pasta dishes dressed with fish sauces, fresh cheeses, sushi and sashimi.
