ORIGIN
Vineyards owned by the winery, grown counter-espalier with Guyot pruning under organic farming.
PROCESSING
Once harvested, the grapes are subjected to soft pressing and decantation of the must. The must itself then ferments at a controlled temperature of 16-18°C.
It refines in steel at a temperature of 12°C for 3 months on its yeasts with frequent batonnages.
CHARACTERISTICS
Color: Straw yellow with light greenish reflections.
Perfume: fruity with hints of citrus, hay and aromatic herbs.
Taste: fresh and intense, with good acidity and flavor.
COMBINATIONS
It goes perfectly with seafood dishes. We recommend accompanying it with a red mussel soup or grouper ravioli. Also ideal as an aperitif together with fresh cheeses.
