PROCESSING
A night of cold maceration for this Vermentino characterized by excellent maturation of the skin. This is followed by soft pressing and natural cold decantation. It ferments slowly in vats at a controlled temperature. It ends with 6 months of aging on the fine lees, so as to mature and obtain an important structure.
CHARACTERISTICS
Colour: deep straw yellow
Perfume: aromas of rock salt, citrus fruits and white peaches
Taste: savory and slightly almondy
COMBINATIONS
Excellent if combined with the typical fregola with clams. It goes perfectly with crustaceans and molluscs, with roasted fish, but also with fresh pecorino.
