Territory surrounding the Municipality of Monti, Gallura.
Destemming and subsequent soft pressing. Fermentation at a controlled temperature between 16-18°C. Cooling to stop fermentation -3° -4°C, filtration, sparkling winemaking with the Charmat method of natural fermentation. Bottling in a nitrogen atmosphere.
Color: bright straw yellow, rich and subtle perlage.
Perfume: delicate and fresh.
Taste: Dry, pleasantly aromatic and fruity flavour.
Excellent with seafood and shellfish. Ideal to accompany a typical Sardinian aperitif at sunset.
