Contrary to what we think, in order to make a rose wine it is necessary to debunk an old myth: white wines cannot be mixed with red ones, as this practice is forbidden by law. The most frequently used method is the short maceration of red grape skins in the liquid part of the must. Rose wines are fresh, fragrant and open up a world of gastronomic pairings, from aperitifs to fish, through white meat and shellfish.
